Gluten-free Apricot Crumble
  • Ingredients
    • 500G apricot (fresh or tinned)
    • 125g gluten free flour
    • (optional) 1tsp cinnamon
    • 1 tbsp salt
    • 80g salted butter (room temperature)
    • 50g brown sugar
    • 40g roasted almonds, or gluten-free oats
  • Method
    • Preheat the oven at 180c
    • Place the apricots in a flat baking dish
    • Roast the almonds in a frying pan without any oil or fat, low heat
    • Keep stirring gently until all almonds have a dark-golden colour
    • In a large bowl, combine the flour, salt and optionally the cinnamon
    • Use your fingers (clean) to rub the butter into the mix, breaking it into crumbs
    • Add the sugar and the roasted almonds (or the oats)
    • Pour the mix over the fruits then bake for 30-40min until golden brown.
    • Wait until the crumble has cooled down to a nice 40degrees.
    • Serve on a plate with a scoop of vanilla ice-cream and a leaf of fresh mint or basil.
    • (option: reduce quantity of apricots and compensate with cherries, the acidity is a nice balance against the sweet apricot)
