Gluten-free Apricot Crumble
- Ingredients
- 500G apricot (fresh or tinned)
- 125g gluten free flour
- (optional) 1tsp cinnamon
- 1 tbsp salt
- 80g salted butter (room temperature)
- 50g brown sugar
- 40g roasted almonds, or gluten-free oats
- Method
- Preheat the oven at 180c
- Place the apricots in a flat baking dish
- Roast the almonds in a frying pan without any oil or fat, low heat
- Keep stirring gently until all almonds have a dark-golden colour
- In a large bowl, combine the flour, salt and optionally the cinnamon
- Use your fingers (clean) to rub the butter into the mix, breaking it into crumbs
- Add the sugar and the roasted almonds (or the oats)
- Pour the mix over the fruits then bake for 30-40min until golden brown.
- Wait until the crumble has cooled down to a nice 40degrees.
- Serve on a plate with a scoop of vanilla ice-cream and a leaf of fresh mint or basil.
- (option: reduce quantity of apricots and compensate with cherries, the acidity is a nice balance against the sweet apricot)
