Louis’ Gingerbread Cookies

A simple recipe that Louis loves making on his own 🙂
- Ingredients
- 90gr of golden syrup
- 75gr of butter (room temperature)
- 100gr of brown sugar
- 1 egg yolk
- 250gr of plain flour
- 35gr of self-raising flour
- 1 tsp of bicarb
- 3 tsp of ground ginger
- Icing = mix 2 tbsp of icing sugar with 1 tbsp of water (add some if need be)
- Method
- Turn on oven at 180 degrees
- Put boiling water in a large bowl, then place a smaller bowl in the large one
- Pour syrup in the small bowl, let it melt
- Pour sugar in a large bowl with the butter, mix well until creamy
- Add the egg yolk, keep mixing.
- In another bowl, sift the two flours and the bicarb, then add to the mixture and mix.
- Add the syrup, keep mixing until soft dough.
- Pour a bit of flour on the countertop, then knead the dough like bread.
- Use a rolling pin to flatten the dough, less than 1cm thick.
- Prepare two baking trays, add a sheet of baking paper.
- With your cookie cutters, cut shapes from the dough then carefully add to the trays.
- Place in the oven and bake for 15min.
- When baked, take the cookies out of the oven but leave them on the tray to cool down (10-15 minutes more)
- Prepare the icing mixture, then use a brush to cover the cookies, and add sprinkles to decorate (optional).
