Birthday Dessert, perfect for camping.

What do you do when you don’t have an oven, but you want to make a nice birthday dessert ? There’s the obvious chocolate mousse, but in summer, it’s hard to keep that mousse cool and firm.
- Ingrédients
- 500g yoghurt
- 500g ricotta
- 150g sugar
- Vanilla extract (optional)
- Seasonal fruits. For this one, I used mango and kiwi.
- 250g Spéculoos (or any biscuit that will remain firm, if you don’t have any biscuit, you can mix coconut powder with butter and flour)
- Méthode
- Mix the yoghurt and the ricotta in a large bowl. Add the sugar.
- Add the optional vanilla extract, and mix well.
- Break the biscuits into crumbles in another bowl.
- Cut the fruits into 1cm cubes, roughly.
- In each glass/serving bowl, pour a bottom layer of biscuit, thick enough to create a base.
- Pour on top of that base a large spoonful of yoghurt/ricotta mix
- Finish with the fruit on top, you can decorate with a basil leaf, or mint, or any herb. You could even have black pepper, goes really well with fruit.
