Fluffy Pancakes

- Ingredients (for 4 people, about 20 pancakes)
- 250g of flour, sifted
- 20g of baking powder (4 teaspoons)
- 50g of sugar (4 tablespoons)
- a good pinch of salt
- 370g of milk (room temperature preferred)
- 2 eggs
- 60g of butter (melted, 60sec in microwave)
- 1 big teaspoon of vanilla (optional)
- Method
- Mix all dry ingredients together (flour, baking powder, sugar and salt) in a large bowl
- In another smaller bowl, beat the egg, and add the milk
- Add the melted butter and the vanilla
- Combine the wet ingredients with the dry ingredients
- Mix well until there are no lumps of flour left (scrape the bottom)
- Leave the dough to rest for 5-10 minutes (time to prepare the coffee and set the table ready)
- When ready, heat up a pan, grease it (butter preferred but oil is fine) – medium heat.
- Use a spoon to drop a couple of blobs of dough the size of a CDrom – cook for 90-120sec approx until small bubble start to form on the wet side, then carefully flip.
- Keep stacking them on a warm plate while you cook the remaining pancakes.
- Breakfast is ready.
