Fluffy Pancakes
  • Ingredients (for 4 people, about 20 pancakes)
    • 250g of flour, sifted
    • 20g of baking powder (4 teaspoons)
    • 50g of sugar (4 tablespoons)
    • a good pinch of salt
    • 370g of milk (room temperature preferred)
    • 2 eggs
    • 60g of butter (melted, 60sec in microwave)
    • 1 big teaspoon of vanilla (optional)
  • Method
    • Mix all dry ingredients together (flour, baking powder, sugar and salt) in a large bowl
    • In another smaller bowl, beat the egg, and add the milk
    • Add the melted butter and the vanilla
    • Combine the wet ingredients with the dry ingredients
    • Mix well until there are no lumps of flour left (scrape the bottom)
    • Leave the dough to rest for 5-10 minutes (time to prepare the coffee and set the table ready)
    • When ready, heat up a pan, grease it (butter preferred but oil is fine) – medium heat.
    • Use a spoon to drop a couple of blobs of dough the size of a CDrom – cook for 90-120sec approx until small bubble start to form on the wet side, then carefully flip.
    • Keep stacking them on a warm plate while you cook the remaining pancakes.
    • Breakfast is ready.
