ANZAC Biscuits

The original biscuit that is only eaten in April…

  • Ingredients
    • 2 cups rolled oats (180gr)
    • 2 cups sifted flour (250gr)
    • 2 cups shredded coconut (150gr)
    • 1 1/2 cups sugar (300gr)
    • 250gr salted butter
    • 4 tbsp golden syrup
    • 1 tsp bicarb soda
    • 2 tbsp boiling water
  • Method
    • Preheat oven to 160 Celcius & place baking sheet on trays
    • Mix all the dry ingredients together in the food processor bowl.
    • In a saucepan, melt the butter then add the golden syrup.
    • In a small bowl, mix water and bicarb.
    • Off the heat, pour in water mixture into melted butter, stir to combine.
    • Quickly add all the wet ingredients to the dry ingredients and combine.
    • Use a tablespoon, take some of the mixture and shape into a ball.
    • Place ball on tray, flatten it. Leave a few cm between each.
    • Bake for 20min or until golden. Let it cool on tray before eating.
    • Store in an airtight container.
