ANZAC Biscuits

The original biscuit that is only eaten in April…
- Ingredients
- 2 cups rolled oats (180gr)
- 2 cups sifted flour (250gr)
- 2 cups shredded coconut (150gr)
- 1 1/2 cups sugar (300gr)
- 250gr salted butter
- 4 tbsp golden syrup
- 1 tsp bicarb soda
- 2 tbsp boiling water
- Method
- Preheat oven to 160 Celcius & place baking sheet on trays
- Mix all the dry ingredients together in the food processor bowl.
- In a saucepan, melt the butter then add the golden syrup.
- In a small bowl, mix water and bicarb.
- Off the heat, pour in water mixture into melted butter, stir to combine.
- Quickly add all the wet ingredients to the dry ingredients and combine.
- Use a tablespoon, take some of the mixture and shape into a ball.
- Place ball on tray, flatten it. Leave a few cm between each.
- Bake for 20min or until golden. Let it cool on tray before eating.
- Store in an airtight container.
